環境や持続性を意識した食材や料理を提案するレストラン。そのコンセプトに呼応するように次世代の空気感を感じてもらえるよう、演出しました。
主役である料理の舞台となるカウンターや個室テーブルには拭き漆という工法で仕上げたアカマツ材が利用されています。木材に漆を塗ると、見た目の美しさだけではなく、防水性がでてくるとともに、木材自体の呼吸を妨げないので調湿効果もあり、耐久性も増します。そして将来塗装により木をリフレッシュでき、これからのレストランの持続的歴史を積み重ねて使用することが可能となります。
カウンター廻りの壁や通路床等にはリサイクルされた窯業スレート板を使用しました。そのスレート板は石炭火力発電所から排出される石炭灰(フライアッシュ)や紙にリサイクルできないような古紙をパルプ化して使用し、工事現場より回収された外壁廃材や工場内で発生した端材等もリサイクルして原材料とした素材です。
その他、大気汚染にも関係する揮発性有機化合物(VOC)をほとんど含まない、環境に配慮された塗料を使用したり、計画的に植樹・伐採された植林木を100%使用した環境に配慮されたラトビア産のホワイトバーチ合板を利用したり、取手などはリサイクルを意識した金物や張地等ありとあらゆる部分に環境や持続性に関係する素材を利用しました。
それらはコンセプトに基づきこだわりぬいた料理と呼応して持続的歴史を重ねられるレストランとなってほしいと願うと共にこのお店に来るお客様にとって、少しでも身近な問題として興味を持つきっかけになればと思っています。

The restaurant proposes ingredients and dishes that are conscious of the environment and sustainability. In response to this concept, the restaurant was designed to give a sense of the next generation.
The counters and private tables, which serve as the stage for the star of the show, are made of red pine wood finished with a method called "wiping lacquer.
