三重県伊勢近郊の食材を使って特殊な窯等を利用して調理された料理を提供するレストラン。
店舗内のあらゆる所の仕上げや物に伊勢近辺の方々の作品、伝統技術、素材を取り入れました。アプローチ床には伊勢砂利を利用した洗い出しを採用。
塀土壁はアプローチ床同様に伊勢の土を利用し、玄関及び個室取手には伊勢近辺で採取された流木を加工しました。
メインの調理が行われる石窯は左官職人・⻄川和也⽒率いる工房カズさん製作により伊勢の伝統的な技術を用いた左官である伊勢磨きを採用。
下地から表面仕上工程までを材料はすべて伊勢の土のみで海藻糊はもちろん、漆喰・顔料を一切使用せず、伊勢粘土の色味そのもので唯一無二の左官仕上となっています。
メインのカウンターは大変貴重な伊勢檜の１本無垢カウンターを採用。
椅子は三重県産の檜を使用して製作した特注椅子。
ワインクーラーや 洗面器の焼き物は 伊勢市に工房があり、全国的にも活躍されているやまぽた山口和声⽒に作品を製作頂きました。
個室及びトイレには伊勢神宮公認・伊勢の写真家・森武史⽒による伊勢をイメージした写真を展示。
その他も木部分も伊勢近辺の木材を可能な限り利用しました。
空間はそれらの素材を感じてもらえる様に過剰な表現は抑え、シンプルなレイアウト、空間構成、ディテールとすることでダイレクトに素材の良さが伝わるように心がけました。
この空間から伊勢の良さを五感で感じて頂ければと願っています。

A restaurant that serves food cooked in special kilns using ingredients from the Ise area of ​​Mie Prefecture.
The finishes and objects throughout the restaurant incorporate the work, traditional techniques, and materials of people from the Ise area.
The approach floor is finished with a washed finish using Ise gravel.
The mud walls, like the approach floor, use Ise soil, and the entrance and private room handles are made from driftwood collected near Ise.
The stone oven where the main cooking takes place was made by Studio Kazu, led by plasterer Nishikawa Kazuya, and uses Ise-bishi, a traditional Ise plastering technique.
All materials used from the base to the surface finishing process are Ise soil, and no seaweed paste, plaster, or pigments are used, resulting in a unique plastering finish that uses the color of the Ise clay itself.
The main counter is made of a single solid piece of extremely valuable Ise cypress.
The chairs are custom-made using cypress from Mie Prefecture.
The ceramic wine cooler and washbasin were made by Yamaguchi Kazusei of Yamapota, who has a workshop in Ise City and is active nationwide.
Photographs inspired by Ise by Mori Takeshi, an Ise photographer officially recognized by Ise Shrine, are displayed in the private rooms and toilets.
For other wooden parts, we used wood from the Ise area as much as possible.
The space avoids excessive expression so that you can feel the materials, and we aimed to directly convey the quality of the materials by keeping the layout, spatial composition and details simple.
We hope that you will be able to feel the quality of Ise with all your senses from this space.
